Lifehacker is one of the largest websites in the world and through Knifeplanet they published my latest video and article.

So what does this mean?

Well, just bragging rights I suppose, it is nice to see so many folks interested in the topic.

    First of all I want to thank you for all of your efforts in creating this blog and everything you have posted on the knife planet website. I really admire your passion and humility that comes through in your posts and commentaries. I have one question of clarification concerning the sharpening angles that you mention from time to time. I assume that the angle is the one created by the face of the stone and the side of the knife blade that is facing the stone as you sharpen and not the angle of the stone and the centerline of the knife blade. So if you are sharpening at a 15 degree angle the total included angle would be 2 x 15 degrees plus the angle of the knife blade itself which could be 3-4 degrees for a total of 33-34 degrees. Thanks again.

  2. Rick, thank you for reading my Blog and asking such an awesome question :)
    Here is my best shot at the answer and please feel free to question me again if I have left things unclear.
    Yes the angle I speak of is the angle of created by the knife edge (side of the blade) and the stone and that angle is altered by amount the spine of the knife, the back of it (the dull part :) ) is raised off of the stone. The math involved is sine, the hypotenuse is created by the stone, the edge of the knife and the spine. This is really described well in a book called An Edge in the Kitchen by Chad Ward. So yes, If my intention is to sharpen at a 15 deg angle, which places a 15 deg bevel on the knife, that is per side so the inclusive angle is 30 deg. The angle of the blade itself does not have any impact on the inclusive angle.
    When I say i tis my intention to sharpen at 15 deg, I sharpen free hand so I am using my experience and muscle memory to create those angles, you need a precision device such as the Edge Pro to create and hold precise angles. (Just happens to be the topic of my next article) And no the angle of the stone does not impact the resultant edge/bevel angle.
